Manx Loaghtan Lamb Salami Handmade on our farm
These rare breed sheep sustainably graze our hill farm and are entirely grass fed, including our wild flower meadows. They are slow maturing, giving flavour and texture closer to venison. The meat is low in cholesterol and the rich flavour makes perfect charcuterie, together with a hint of pepper, herbs, garlic and wine.
The flavour is enhanced using garlic, pepper, rosemary and wine to produce a delicious, cured meat. Eat on its own or use in cooking.
