We select locally produced pork that is sustainably reared on nature friendly farms. The pigs have to be pasture raised with the highest welfare standards.
The orange, juniper berries and vodka marinade gives our air-dried ham a wonderful subtle flavour. Ideal as part of a charcuterie board or served on its own with crusty bread and cheese.
Ingredients: Pork, Curing Salt, Demerara sugar, Dextrose, oranges, vodka and juniper berries
Gin & Lime Air dried Ham

The gin and lime marinade gives our air-dried ham a wonderful tangy flavour. Ideal as part of a charcuterie board or served on its own with crusty bread and cheese.
Ingredients: Pork, Curing Salt, Demerara sugar, Dextrose, lime zest and juice and gin.
Manx Coppa

Our Coppa is made from the shoulder and neck and is hung for three months after the curing period giving a perfect flavour and texture. Ideal as part of a charcuterie board or served on its own with crusty bread and cheese.
Ingredients: Pork, Pork fat, Sea Salt, Black pepper, Demerara sugar, Dextrose, paprika
Manx Beef Bresaola
Handmade on the farm
Made from local top side of beef that have been sustainably reared on grass. It is rich and deep in colour with delicate marbling and an almost gamey aroma. The flavours are gentle, coming through in layers with a balanced delicacy and dry cured for over twelve weeks.
Ingredients: Manx Beef, Curing Salt, Sugars, Black Pepper, Thyme, Marjoram, Juniper Berries
